Cooking Healthy - Sample Recipe

ORIENTAL ORANGE RICE
PREPARATION: 15 MIN. COOKING: 35 MIN.
SERVES: 6  (1/2 CUP EACH) FREEZES WELL


A fancy rice dish for any time or company time.
1 cup WATER.  Place in large frying pan.
1/4 cup FREEZE DRIED ONION.  Add to pan
2 tsp FREEZE DRIED CHIVES.  Add.
1/4 tsp GARLIC POWDER.  Add and stir.  Simmer until
onion is soft about 4-5 MIN.
3 cups WATER.  Add to frying pan.
1 1/4 cups BROWN RICE (RAW).  Add to frying pan.  Bring
to boil, lower and simmer without a lid for 25 MIN.
Stir occasionally to avoid sticking.  Cook until rice
is tender. Determine by tasting.  Add more water
and cook longer, if necessary.
While rice is cooking prepare spices.
1/2 tsp GROUND GINGER.  Add to small bowl & hold.
1/8 cup GOLDEN RAISINS.  Add to bowl.
1/8 cup SLICED ALMONDS.  Add to bowl & set aside.
1/2 cup FROZEN ORANGE JUICE CONCENTRATE
(4 OZ). Add when rice is almost done. Also, add
spices from small bowl. Cook until flavors blend
together about 4 MIN.
Serve now or cool and refrigerate or freeze.
